II/ How to Prepare Soy Sauce-Marinated Salmon

Step 1: Ingredient Preparation

• Rinse the salmon and soak it in 20ml of mirin. Then, remove the skin and cut it into bite-sized pieces. Place the salmon in the refrigerator to marinate.
• Peel and thinly slice the onion. Peel and crush the ginger.
• Wash the spring onion and cut it into 2-inch segments. Peel and crush the garlic.
• Clean the lime and cut it into rounds. Slice the green and red chilies.

Step 2: Prepare the Soy Sauce

• In a small saucepan, bring 250ml of water, 200ml of soy sauce, 3 tablespoons of sugar, and 100ml of mirin to a boil.
• Once the soy sauce mixture is boiling, add the spring onion, onion, garlic, ginger, peppercorns, green chilies, and red chilies. Let it boil for an additional 15 minutes, then taste and adjust the flavor as needed. Turn off the heat and let it cool. Strain the sauce to remove solid ingredients.
