Firmness and elasticity: The most common way to test the firmness of squid is to use your hand to press it directly on the body. Fresh squid will have firm and elastic flesh, while less fresh squid will have less firmness and elasticity.

Condition of the tentacles: Checking the condition of the squid’s tentacles can help determine its freshness. When you flip up the squid’s tentacles, you will see round suction cups underneath, attached to the tentacles. If these suction cups are intact, firmly attached to the tentacles, then the squid is fresh. Conversely, if some of the suction cups are missing, it indicates that the squid is no longer fresh or may have been damaged during transportation.

Examine the eyes: Checking the eyes is an effective method for selecting fresh squid. In fresh squid, the eyes will be bright, clear, and you will be able to see the pupils clearly. On the other hand, in less fresh squid, the eyes will appear dull, and the pupils may be cloudy.

Here are two delicious dishes made from Squid:

Steamed Ginger Squid


– 1 Squid
– Ginger, dried shallots, green onions
– Seasonings such as fish sauce, seasoning powder, MSG, cooking oil…


Prepare all the ingredients. Rinse the ginger and pound it lightly before placing it in a steaming pot.
Slice the carrots and shallots.
Place a steaming rack on the stove and pour about 100ml of water into the steaming pot.

Clean the squid and place it on top of the ginger. Add the sliced green onions, pounded dried shallots on top.
Steam the squid for about 20 minutes. If using smaller squid, reduce the steaming time.
Turn off the heat and enjoy the delicious Steamed Ginger Squid.

Mixed Stir-Fried Squid


– 500g Squid
– 100g peas
– 6 baby corns
– 1 bunch of kale, 1 carrot
– shiitake, celery, garlic chives, shallots, and green onions
– Seasonings


Squid after cleaning, use a knife to cut into a checkered shape, cut into bite-sized pieces.

– Vegetables, beans, baby corn, shiitake mushrooms, carrots washed. Allow to drain and slice accordingly. Green onions, celery and garlic are washed and cut into pieces.

– Put the pan on the stove for cooking oil and then fry the dried onions. When the onions are fragrant, add the squid and stir-fry, seasoning to taste. Then, when the squid is cooked, you put it on a plate.

– Next, you turn to the vegetables, peas, baby corn, shiitake mushrooms into stir-fry. Then add seasoning to taste.

– Wait for the vegetables to be almost cooked, then add the fried squid, continue to stir-fry with the vegetables for about 3 minutes. The last step, you can add a little pepper to taste and then turn off the stove.
